As he did in the military as a culinary specialist. Bistro Enzo was created from a desire to return to his cultural roots and share the flavors, warmth, and comfort of Argentine-inspired cooking with Jacksonville.
The restaurant is built around good food, honest work, and a place where people can gather. From fresh empanadas and grilled favorites to sandwiches, brunch, beer, and cocktails, Bistro Enzo brings a casual but authentic Argentine dining atmosphere to the JAX local community. After serving in the military, as a culinary specialist for 20 years, Chef Enzo returned home to Jacksonville with a deeper appreciation for family, culture, and community. His love for Argentine-inspired food came from the meals he grew up around. His mother and father grilled meats, empanadas, sandwiches, and dishes made to bring people together. For Chef Enzo, opening Bistro Enzo became a way to reconnect with his roots and continue serving others, this time through food and hospitality.

Chef Arnold, a Jacksonville native and Enzo’s lifelong best friend, first met Enzo during military service in 1991. Their friendship grew through discipline, shared loyalty, and purpose. Today, Arnold brings that same dedication to Bistro Enzo, helping create bold grilled dishes, local favorites, and a welcoming experience for every guest.
